Change all select list fields from `Select a value` to `- Select -`

User Story or Problem Statement

We want consistent drop down behavior across the site.

Acceptance Criteria

• [x] Document all dropdown fields that have "Select a value"
  • [x] Screenshots and URLs would help!
• [ ] If none, close this ticket
• [x] If they exist, pass to Rachel Kauff for validation that we should proceed with:
• [ ] Wherever a dropdown has "Select a value", update to "- Select -"

These are the ones I took, but basically the "- Select a value -" string shows in the same places in the forms.
