New VAOS - Record VCR Cassettes for available appointment slots end-point #24806

As a continuation of the work done in #23884, VCR cassettes need updating to reflect data retrieved from the hosted new VAOS service.

VCR cassette data reflects actual data hosted by the new VAOS service
Adjustments are made to the code-base such that vets-api exposes accurate data value/schema to vets-website
Documentation is updated to reflect any code changes

work paused, waiting for VAOSR-1939 to be moved into staging.

Had some issues in returning slots if the search date range was too large. This was not mentioned in the VAOS Service swagger docs nor spelled out in the error message returned from the VAOS Service. Submitted VAOSR-1961
