Map Upstream Services: Review FWD Proxy configurations

Issue Description

Because there is a need for an updated and comprehensive list of the upstream services that Vets API makes call-outs to, it is necessary to review the existing documentation and diagrams and updated or recreate the documents. Updated documentation should be stored here with links going to GitHub as necessary. This will eventually move to the VA Platform website for use by VFS teams. The new documents should be reviewed by the cohort to ensure that there are no critical elements missing for FWD Proxy.

Review this document for the particular data points that need to be captured for this Upstream Service.

7/10 - this is in progress. Outdated code. Each individual files being adjusted as needed. Getting some new diagrams, more clearly defined and updated in 2024. Updated documentation. Should have diagram updated 7/10 and the documentation updated 7/11. Look at this nightmare - very detailed. This is another great diagram.

Working on rewriting script for changes in CODEOWNERS and mapping top level directory to visualize via Graphviz.
