[UX] 10-10EZ - Evaluate + Prioritize Insurance Section UX Opportunities

Issue Description

When the EZR was launched, there were some Platform and CAIA content updates made to the insurance information section and there are some outstanding "should" feedback as well. Today, the EZ and EZR are out of alignment content and pattern wise. The EZ uses the old deprecated conditional wizard pattern.

This task to to list out all the UX concerns, consistency issues and pattern updates to evaluate and prioritize with the team.

• [x] Create a Mural and/or Figma page to evaluate the insurance section UX issues
• [x] Conduct desk research from past studies, best practices, VA.gov, etc
• [x] GA analytics research questions and sync with DA to add data
• [x] Outline opportunities with effort and experience ratings
• [x] Review with UX and entire EZ/CG team - working session

Acceptance Criteria

• A prioritization artifact of what UX improvement opportunities exist, why and the ratings

Thanks @luis-simauchi! - I also moved some more analytics details out of Figma (where only I can edit) and into Mural where we can collab! (same board that we can use for the team working session later this week)
