Create remaining tests for Postman collection priority list #89621

Description

Previously, the Platform Reliability Team and the Platform Product team have worked together to identify a priority list here, we need to create the remaining 16 tests in Postman that have been identified as a priority. The Postman collection is available here.

Acceptance Criteria

[x] The remaining 16 endpoints have tests in the Postman collection being used to test vets-api in EKS

There are about 3 tests left to create.

There are a few issues with existing endpoints not functioning as expected.

Additionally, there was one duplicate.
