Update datamodel based upon Kibo #194

Review and update datamodel based upon Kibo. Known changes to document:

New column FITMETHOD in zall*.fits and upstream files (details of which files TBD)
new FIBERSTATUS bits NEARCHARGETRAP and VARIABLETHRU from desihub/desispec#2313

And there are probably other changes that I'm not remembering.

Note that we also need to validate desidatamodel against iron, #182. Presumably we need to cut a tag so that we can make the data model for DR1 and then validate the data model on kibo for DR2.
