update simulating spectra after desisim newexp refactor #4

This PR makes a few small changes to the simulating spectra tutorial to make it compatible with the recently merged desihub/desisim#250 refactor of newexp.

desisim.obs.new_exposure() return values changed.
simspec files METADATA HDU changed name to TRUTH (I'm not sure if that was a good idea, but it did...)

I'd appreciate a separate cross check from @moustakas, @akremin, @geordie666, or others that these instructions work (as a post-facto test of desihub/desisim#250...)

I'm going to merge this old PR now so that I can start anew from master for updating it for the SLAC meeting next week.
