Versioned docs reorganisation #19

This PR reorganised the versioned docs. The previous testnet/mainnet distinctions has been removed in favour of a direct version (now v2.3.1) that matches the current one in production.

To make it quicker to review, just check those files with this path e.g: "docs/03-fullnode/" and ignore the versioned ones as they're generated directly from the docs ones.
