Fix spelling CI pipeline #318

This fixes some spelling errors that are causing the pipeline failure.

Draft for now to make sure the CI fixes really work on this repo.

This removes Gemfile from spell checking entirely. It's a bit heavy-handed, but there's some Regex in that file that doesn't pass and I'm not sure how to resolve it better without adjusting more of the CI config.
