COP DEM example doesn't actually use geopandas? #11

geopandas is imported but doesn't actually seem to be used. Consider removing from notebook and env. https://github.com/developmentseed/asdi-examples/blob/main/cop-dem/cop-dem-glo-30-stac-access.ipynb

Also there's a bug where the bbox centroid is used before it's computed. Going to change this ticket into fixes for the COP DEM notebook.
