@vincentsarago; so happy we have this demo that goes from ingestion to creating the mosaic. I kept the same structure but reviewed the text. Let me know if there is anything you want me to look more into; it's ready to merge for me!

I've added a bit more comment and went crazy with a multiple collection mosaic 😅
