Re: organizer label, I would vote against a sweatshirt. If the space is warm, I'd prefer not to be stuck with a sweatshirt on that I can't remove.
Re: con-swag, I think t-shirts are fairly simple in that we'll be asking for t-shirt size at signup in order to order the correct amount (throwing in some extra for last minute changes).
T-shirts are simple to think about and accidentally complicated to deal with. To really be accommodating we need to have about 10 different sizing options with overrun (5-10%ish) for each one:
Non-Fitted: S, M, L, XL, 2XL Fitted: S, M, L, XL, 2XL
all of which leaves out XS as even a choice. And we'll be bringing some home of every size that we have to determine what to do with since we've had to order overrun for every size to account for people changing or having someone else "order" for them at signup.
We need to determine design, colors and shirt quality and costs can increase quickly the more we have multiple colors or higher-quality shirts.
And: does everyone really want another t-shirt to go in their drawer? Not shutting the idea down, just trying to provide the counterpoint and realizing that dealing with a shirt design is quite a bit of additional brain power for something people may not even really want, but get because its a given.
T-shirt are the go to for conferences. I'm a t-shirt guy so I am cool with it. Other cool swag that I have gotten or seen at conferences:

See if we can get all the sponsors to submit their WORST/Cheesiest add in black/white and get Diner Mugs made up with sponsor logos on half and the Convention logo on the other.
