No rush to merge this yet, but it's ready whenever dhall cuts a new release to Hackage (hopefully soon)

As a reminder, only left changes in cabal/stack files

Some and None are so much nicer that I can't even comprehend that we were doing it any other way, now that I've seen them in action.

Great! I've request a pr with some minor changes:

update stack.yaml
drop unused import insert-ordered-containers
bump up version of dhall-to-cabal to 1.4.0.0 (not sure if is required though)
