docs: fix relative demo links to open in new tab #1498

The current demo links were fixed to be in the /demo format, however, Docusaurus hijacks the links and tries to look up the path internally even though the URL was correct. This new format restores the functionality also back to how it was originally, demo opening in a new tab.
