I want to suggest creating a different version of this snap that will use wine-staging. Because GOG Galaxy is a game service and looks like wine-staging may provide better support for gaming experience. I am not sure about the best way for this. It may be a different snap (something like gog-galaxy-wine-staging) or just a channel of this snap (as I understand it'll be a more idiomatic way)
