Replace assembly plugin with shade plugin #45 #54

Applying the changes done by @sparrowV in https://github.com/diegoceccarelli/json-wikipedia/pull/47 with some extra changes:

  1. some scripts are not supported anymore;
  2. now the jar is runnable so I updated the scripts and the Readme to reflect that
