- Create a custom theme using Material UI's theme creation utilities.
- color palettes
- font size. e.g. ideally we specify a root size of 16px and then have have more semantic font size theme names like body, title, descriptions, etc that are relatively sized to that root value
- spacing. similar to the font size, ideally have more semantic naming that map to either specific values or uses relative sizing (idk what the best approach is, probably the former for now)
