Update in response to some broken links #11

This PR updates/replaces some links and tweaks the link checking config.

Note that UKWA is down, so link checking is skipped on those for now.

Some useful resources are now only in web archives. I'm not sure if hiding them in the ARCHIVED.md page is a good idea, given they are still accessible and potentially useful. Perhaps we should mark them as 'Archived at the Internet Archive' (or wherever) instead?

Ah, I see some are already marked as archived versions. I'll try to make them consistent.
