Reduce size of .git folder in docker image #1

There's a pack file for the dea-notebooks repo which is 2.5GB. I removed it from the build (using .dockerignore) but pip wouldn't install. Possibly pull & build submodules when running? Dunno

For not I just added that pack directory to .dockerignore and it seemed to work
