[DOKS-Egress-Gateway] Include details of setting default VPC #60

I couldn't see that crossplane-contrib/provider-digitalocean supports 'vpc_uuid' so I have added instructions on setting the default VPC for now. I have opened an issue for this. I hope this helps.

The provider does in fact support vpcUuid so I will update this pull request accordingly.

Very good point @jkpe. Seems that somehow I missed this aspect on the Crossplane side.
