adjusting variables in defaults/main.yml and templates/haproxy.cfg.j2. quick test deployment succeeded.

Somewhere buried in the repo is a known issues section. I think I'll add it to a file outside of the book/summary.md scope so it's kept track of.

We should add the FLIP variable name change history to be on the lookout for it in the event it breaks again.
