When creating the Gen 2 VM, go to the settings of the VM, then go to the Security Tab. Make Sure “Enable Secure Boot” is
 enabled. Then change the Template in the drop down box from “Microsoft Windows” to “Microsoft UEFI 
Certificate Authority.” Then the VM will properly boot from the Ubuntu ISO and also from the virtual hard disk 
after Ubuntu is installed.

According to MS there is no performance gain going from GEN1 to GEN 2, https://learn.microsoft.com/en-us/windows-server/virtualization/hyper-v/plan/should-i-create-a-generation-1-or-2-virtual-machine-in-hyper-v so postponing to some later version.
