Update links and similar after repo was transferred to DIME account #5

I have updated a lot of links that had been outdated since the repo was transferred to the DIME account. I noted this after this #4 issue.

@BBieri , I do not think I have changed anything that breaks anything. The one place where I still might have broken something would be here: https://github.com/dime-worldbank/quarto-dime-theme/blob/d540866beba2ebedf309267dfcfd74c3653c74a9/README.md?plain=1#L16-L21

Is there anything I need to do to make that line work?

I know you just started a PhD program, and you might be ridiculously busy, so if I do not hear from you in a week or so I might merge this after have tested these changes to the best of my abilities.

Hi @kbjarkefur, thank you for the PR and for updating the link in the settings. If this line doesn't work, my guess is that it has to do something with the GitHub repository settings as this didn't work when I had it as a private repository. I'll take a closer look at things this over the long weekend but this should not be too big of an issue :)
