Mac installer plus #36

The macOS installer is generated using CPack

also reverts to always use the AME 12.0 presets as the newer ones are faulty

Please don't merge this until the corresponding PR in the foundation repo has been merged and the submodule here brought up to date.

I've added the foundation update in a subsequent patch; was trying to do it in-place in this branch, push then merge - but this proved problematic.
