covid_plot split 6 ways (again) #199

redo the split because we changed main and to ensure the copy commit is there to preserve history rebases https://github.com/djay/covidthailand/pull/195 on top of new main

Pulling this locally to rebase against in local test-bed before merging to main.

didn't preserve history with blame -C. Fixed in https://github.com/djay/covidthailand/pull/200
