Open Veracrypt. You should see the Veracrypt starting screen. (This is the Mac version.)
Click Create Volume
Select Create an encrypted file container.
Specify the Volume Location...enter a path to a new file. Veracrypt will create a volume inside that file. The file acts as a folder and serves as a container for the volume. (Note that if you enter the path to an existing file, Veracrypt will delete the file and create a new file with the same name.)
Accept the default encryption options.
Assign a volume size. [Discuss how to determine the size you'll need; perhaps discuss how Veracrypt handles sparse volumes?]
Enter a password (and confirm). Store this password carefully. We recommend that you use a password manager. Without this password, you will not be able to access the files that you store in this encrypted volume. You will have locked yourself out of your data!
Choose the appropriate Format Option.
Select the Cross-Platform Support that you desire...select "I will mount the volume on other platforms" you plan to store the file, or share it with colleagues, on other platforms. Otherwise, select "I will mount the volume only on Mac OS X." [Describe what's going on here?]
On the Volume Format screen, move your mouse as randomly as possible. That movement is used as an input by the encryption algorithm.
Click format. Veracrypt will begin to format the volume. An alert will appear when its done.

Carlos says that Windows is pretty much the same. He will add Windows-specific differences in line.
