It appears that some of the tags are missing the linux/s390x platform the one that I noticed was 3-slim.

Has the s390x platform been deprecated?

See https://github.com/docker-library/pypy/pull/58 -- you'll need to switch to the buster variants if you want to continue using this image on s390x.
