Move /latest.json and /exchange.json routes to helper #63

The website has been down the past 24 hours due to the exchange.json route failing due to https://github.com/docpad/extras/commit/dde910697db9fa9012cf4177f784f3db218efc0d - this shouldn't bring the website down, and is more of a helper function
