Sweet potato hash

example of a random assortment that turned out pretty great:

• 2 huge sweet potatoes, peeled and cut into bitesized pieces, mixed with a bit of oil, smoked paprika, and curry powder
• 1.5lb ground pork
• 1 yellow pepper, chopped
• 3 green onions, thinly sliced
• a bunch of fresh basil leaves, chopped
• mayo mixed with curry powder and a bit of smoked paprika

roast the potatoes for 20-25 minutes, flipping/stirring every 10 or so

fry the peppers for a bit and then add the ground pork and fry until cooked

add the green onion and fry briefly

off heat, add the chopped basil

add a bit of everything to a bowl

I'm sure I wrote this somewhere but I can't find it. This recipe works well with regular potatoes.

• potatoes for 4, cut in bite sized pieces and roasted
• 2 bell peppers, chopped
• 3-4 green onions, chopped
• 3 cloves of garlic, minced
• ground turkey (or pork)

1. fry the peppers
2. toss in the garlic for a minute
3. add turkey and fry until cooked through
4. add the green onion for a minute
5. add the roast potatoes
6. serve with smoked paprika mayo
