Release v6.0.7 to production

Elixir is partially done but will need another update when v6.0.7 is published as a tag/release

Zenodo currently links to v6.0.4 and should update/refresh once we publish v6.0.7. When we do that, we’ll revisit the Zenodo links to verify

I applied the v6.0.7 tag and Elixir updated accordingly. If the group agrees that we don’t need to hotfix this version further, I can complete the remaining steps (including npm publish, which should in turn update Zenodo as well)
