Pekko 1.0.1 and Pekko HTTP 1.0.0 are now available.

@pjfanning Hi PJ, is there an ETA for v3.0.0 release with pekko? I see there is beta available since March v3.0.0-beta1

We would also like a 3.0.0 release now that the 1.0.X libraries from pekko are available?
