update: bump driver to v3.0.1 and update driverkit configs #1917

This updates the driver dependency to v3.0.1 and adds new driverkit configs accordingly. Our CI should now be able to build them automatically for x86_64 and aarch64.

I think GitHub is not able to show it because the diff is too large I think, but configs for 3.0.0+driver have been removed!

Yeah, for 3.0.0+driver I only added two sample configuration to test the CI, I didn't add the whole bulk of configurations! So I only had to remove two YAML files here.
