So far everything looks good in Phoscon. The values all seem to be correct. Can someone help me connect the room thermostat and the ITRV?

You could try what's described here: https://github.com/dresden-elektronik/deconz-rest-plugin/wiki/How-to...#manually-bind-server-clusters Use the grey client cluster of the room thermostat as source and the blue server cluster of the TRV as destination (or try the tRV endpoint 01 if the server cluster doesn't work).
I tried to connect the two devices according to the instructions. Depending on what you select, it says success in the status, but neither the current temperature is synchronized from the room thermostat to the ITRV nor is the target temperature synchronized in any way.

Can't anyone help me connect the two devices? Unfortunately, I can't set the heat set point on the room thermostat either. Currently the device can only measure temperature and humidity.

Unless the manufacturer specific cluster holds this functionality, it is not possible to remotely set any temperatures on the device itself. However, if you physically interact with it, you can apparently steer a thermostat remotely if client and server thermostat clusters are directly bound to each other.
