Thx for this great document (and the overpass instance). I was quite happy also to see that a french version existed!
I assume it was an automatic translation so I tried to improved it a bit. The hard part was on Classifying tags. I am still unsure if I get them correctly: few of them exist with few keys and the value are limited and defined ? It will be great to have another french person to do some cross validation.
