Fix errors in latex #62

FYI @geraintpalmer the failure that caused us to remove the LaTeX file was actually a failure due to LaTeX syntax, see: ac5ac3f

I suspect it wasn't compiling properly locally for you (although it might have been doing so silently).

This fixes that and adds back a check for LaTeX compilation.

Once CI passes I will merge this.
