Remove Ruby 2.7 from CI. Update checkout action versions. #60

The gem now requires Ruby 3.0.0 or higher. This PR removes Ruby 2.7 from the CI matrix, getting everything to green.

This also updates the checkout action versions to v3.

Sorry but this was done by a mistake. We still support Ruby 2.7.
