Extend test coverage for observations #138

The types in DSE.Open.Observations and DSE.Open.Observations.Abstractions are stabilising.

We should extend test coverage on these types.

Serialisation/deserialisation tests are high on the priority list. However, we eventually want robust coverage for all these types.
