Ensemble Support for Stratosphere Use Cases

Describe the Enhancement

Currently, the stratosphere use cases accept a single model. However, many S2S datasets are ensembles. These 3 use cases need to be updated to support the usage of ensemble models. We will need to contact a SME to determine the best way to handle ensembles in these calculations
