move aesthetics out of ggplot() call -- makes chaining layers possible

There is still a bit of cruft in the code that can be cleaned up, but things seem to be working well.

Still to do: see if we can handle setting vs mapping better to allow for on-the-fly calculations withotu having to modify the data frame.
