Clean up references in doc directory #42

The doc directory contains quite some files which were automatically taken from Bitcoin with names being replaced from bitcoin to unite, but many of them don't apply to UnitE in the same way. We need to clean that up so that the docs are meaningful for UnitE.

We also have to define where we want to track upstream documentation or where we replace it by our own docs.

This is mostly done through https://github.com/dtr-org/unit-e/pull/646. Besides the clonemachine follow-up work mentioned by scravy, there still is still the Linux packaging stuff (https://github.com/dtr-org/unit-e/issues/648)
