Remove unused validation variables

Removes some unused variables:

nLastBlockTx – global variable, declared in validation.h and only written to in miner.cpp, not used anywhere
nLastBlockWeight – global variable, declared in validation.h and only written to in miner.cpp, not used anywhere
fMineWitnessTx - unused argument, defaults to true, no used in CreateNewBlock (mines witness always as segwit is enabled by default)
hashBestBlock - unused, never read anywhere

The global ones from validation.h have been removed in bitcoin too: https://github.com/bitcoin/bitcoin/blob/master/src/validation.h
