Update POTFILES

Mark some strings translatable

Mark the application name translatable

Add missing shortcuts to the help-overlay.

This is superb. Thank you for the pull request.

There appears to be an issue with the shortcuts page with these changes. Looks like a bug in GTK:

I'm going to ask about this on the GTK dev channel.
