You're not required to install the Dropbox client to synchronize with Dropbox on the Mac or iOS. Just sign in with a Dropbox account during the linking process and it'll work. Does that help?
Ah, I see. I previously had Dropbox installed and had to remove it, so the "Monitor file for changes" config broke. But when I removed config with AppCleaner and reinstalled, I got it to work.
I assume the sync might take longer without the file monitor, but hopefully the sync will at least work now.

My work Mac isn't allowed to access iCloud Drive and can't install Dropbox. Could there be any other way of synchronizing between my phone/watch and my MacBook?
