Downgrade to Python 3.7 #20

Similar to #19 - we downgrade to 3.7 (was pretty easy).

thanks for this, I think this will increase adoption. We can keep the requirement be aligned with end-of-support of Python itself. 3.7 will be EOLed by 2023-06.. , we can make the dependency be 3.8 :-)
