there is an existing carbon_defi built on ethereum, we should be able to reuse for sei chain
we should probably turn this one into a macro, while we're at it?

i'll move ahead with linked PR, then we can do carbon_defi in separate PR since it may take some refactoring to existing code on other chain(s) 🙏
