polygon migration impact on spellbook: MATIC --> POL

current understanding of changes:

the token symbol on the polygon POS chain changes from MATIC to POL (native address remains the same)
for other chains, there is a separate token POL which is deployed along with an upgrade contract which correct emits transfer events

actions in spellbook:

update metadata symbol of MATIC to POL where applicable (i.e. prices, erc20, etc)
add other chain addresses to metadata (i.e. ethereum here)

good news, erc20 metadata source already has ethereum token:
