Would it be possible to have this package incorporate the recommended fonts that are available here? https://github.com/edwardtufte/tufte-css/tree/gh-pages/et-book

As this is also a template to base a document on it would be nice if this feature could be added.

(sorry, I'm too bad at LaTeX to make this work myself)

Yes, you can install the TTF font on you computer. It is named ETBembo instead of ET Book. There is an example of using Pandoc to generate LaTeX PDF file in docs/defaults/pdf.yml
