How To Make Kombucha - First & Second Fermentation image https://youtu.be/23P7QqsjEMw

SCOBY?

Symbiotic Culture of Bacteria and Yeast (SCOBY) is a syntrophic mixed culture, generally associated with kombucha production wherein anaerobic ethanol fermentation (by yeast), anaerobic organic acid fermentation (by bacteria), and aerobic ethanol oxidation to acetate (by bacteria) all take place concurrently along an oxygen gradient. A gelatinous, cellulose-based biofilm called a pellicle forms at the air-liquid interface and is also sometimes referred to as a SCOBY. Either samples of this pellicle or unpasteurized kombucha can be used similarly to mother of vinegar to begin fermentation in pasteurized sweet tea. https://en.wikipedia.org/wiki/SCOBY

Doesn't look very appetising, but it's the "key ingredient". image

Not a very "risky" or high value purchase, but still want to confirm if OK to get it sent to C's house.

Optimize Your Microbiome: Dr. Will Bulsiewicz | Rich Roll Podcast: https://youtu.be/EABZqi3HtRM

The biggest takeaway of this 2 hour podcast, which is absolutely worth listening to / watching as it’s packed with insight, is: eat broccoli sprouts! If you want to restore your good gut bacteria, forget about taking 30+billion culture probiotic capsules and prebiotic drinks, just consume a cup of broccoli sprouts each day for a month. #131

The other key takeaways are:

  1. The poultry industry has been feeding Aspartame to chickens since the 1950’s because it increases their appetite and makes them put on weight faster. Yes, aspartame!! The artificial sweetener in “Diet” or “Light” soda like “Coca-Cola Light” or “Coke Zero”. Because it doesn’t contain any calories, your body gets the sweet (“here’s some energy”) signal from consuming it, but doesn’t get any energy from it! So an hour later your body is craving the energy it didn’t get. Which means you are “hungry” again. The most likely outcome is snacking. If you keep consuming Cola Light/Zero instead of any actual energy, you keep tricking your body into expecting energy and getting Zero which is a vicious cycle. But the biggest issue is that the aspartame is poisoning the good gut bacteria. So your body has less ability to extract nutrients from any good food you eat. In other words: if you’re trying to “lose weight” by eating a salad, but you wash it down with a diet soda thinking you’re being smart because it has “no calories”, think again! You are actually undoing the positive effect of the salad by consuming the “diet” soda!!
  2. Anything with food additives/preservatives for extending shelf life is by definition trying kill bacteria that would spoils the “food” (junk). This is not limited to obvious junk food like Twinkies and PopTarts, it’s especially true of less obvious things like “shelf stable” snacks packaged in plastic that last 10x longer than anything similar you could make yourself. Processed/packaged meats like sausages, cold cut meats (ham, salami and jerky) and ground (“mince”) meat are all packed with additives that kill bacteria. By definition heat does not destroy these additives so cooking the meats makes no difference. These are powerful chemicals that obliterate bacteria. If you’re having a sausage as a “snack” is nuking your microbiome. 💣
  3. Fecal Transplantation (Bacteriotherapy) is a temporary fix that was first performed in order to help people recover from excess antibiotics. For people who do not alter their food intake their gut bacteria returns to their “normal” (bad) in less than a month. So for 99% of people (who don’t change their eating habits), the positive effect of Fecal Transplant last less than a month before the bad bacteria take over again.

broccoli sprouts & no processed junk
