@carolrmc It was delicious, thanks! However I should have put half the amount of cream in. Need to test oat-based (vegan) cream next time. π
Today Iβm making a super basic Leak & Potato soup:
Donβt worry, not using all of these leaks. Just two. π And considering adding spinach too for some extra nutrients. π
All coarsely chopped:
covered with just enough water:
Lid on:
Induction hob programmed with timer:
Now I can get back to work and will have soup for lunch. π₯£ Total time taken to peel and chop veg: 7mins.
Enjoy βΌοΈ

Fully cooked going to hand blend now:
Done:
Always clean the hand mixer blade immediately under running water to ensure no food residue:
Leave to air dry in the rack:
Pack it away safely once dry.
Enjoy your soup!
@iteles the batch doesnβt have salt. So if youβre eating some, you may need to add. I made it this way cause it taste fine to me and is child-friendly. π
@carolrmc wish we could share our soup with you. π hope you get/feel well soon. π€πΌ
For number 4, I would strongly recommend this recipe: https://www.sproutedkitchen.com/home/2012/1/25/black-bean-butternut-soup.html
We used to make it all the time 10 years ago ("chocolate soup") and then stopped and forgot about it!
@iteles great! will make that one next on Monday. β
Recipe:
Bought the cabbage for this on our Aldi trip yesterday. π
@nelsonic i drained a whole bunch of water from the chuchu & courgette soup I made the other day which can be used as a vegetable broth for this.
Sounds good. Point me to it when you can. π
In the Samsung fridge in a labeled jar, top two shelves π
Thanks. Will use it when making soup tomorrow. π
Making chickpea and spinach soup using dried chickpeas today:
just going to leave the βbaseβ and chickpeas slow cooking for the next couple of hours. Then will add the fresh spinach at the end and blend. π
There are plenty more. But I want to focus on one of these each week.
Not on the original list but very easy to make:
