Replace outdated Chain Registry JSONs with links to GitHub #140

The dYdX Ops subDAO suggest that the dYdX Chain Software documentation shifts from using JSONs for Chain Registry values, to referencing the corresponding folders in the Cosmos Chain Registry GitHub repository:

Hi, @jiajames I think it will lower the need to maintain a separate copy of the Chain Registry JSON, if we opt to link to the Cosmos SDK GitHub - some of the validators already actively participated in keeping the data there up to date.
